Dutch Baby/Yorkshire Pudding
Dutch Baby is a family favorite that makes a delicious breakfast when topped with chevre, kiwis and honey or maple syrup. In England, it is known as Yorkshire pudding, a scrumptious side dish under beef pot roast, slow cooked veggies and gravy (although it is usually made in muffin tins instead of one large pan that way).
1.5 c flour
1.5 c milk
Heat oven to 500 degrees f. Melt butter in glass or cast iron pan in the oven as it is preheating and you mix the batter. Meanwhile, blend first eggs, then milk, making sure the milk doesn't splash out! Add flour and blend until just mixed, no more.
When butter has melted and is sizzling, quickly pour the batter into the pan. Remove from oven when it has puffed and turned golden on top, about 12-20 min.
