2 egg yolks from pasture raised hens or ducks
splash of apple cider vinegar
salt and peper to taste

Homemade Mayonnaise is a staple sauce for so many dishes from salad dressings to aioli sauces like last week's. It is also super easy to make!
Combine egg yolk with mustard, apple cider vinegar, salt and pepper. Using an immersion blender, or just a normal blender, drizzle in the oil until it has formed a creamy consistency, or, is as thick as desired. Taste, and add an optional splash of lemon juice ir more acv if needed.
You can dress this sauce up with balsamic vinegar for a tasty dressing, ketchup for a dipping sauce, or add raw garlic for an aioli.
