Cream of Tomato Soup with Spelt Bread

Have this for breakfast, lunch dinner or a hearty snack:
Slice a piece Camas Country Spelt Loaf and spread liberally with Raw sweet cream butter, and sprinkle with sea salt. Garnish with fresh basil, oregano, fennel or thyme. Oh so delicious!
 
Here is a recipe for Cream of Tomato Soup made with the following member store ingredients: 
 
  • 2 tbsp raw sweet cream butter
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 5 tomatoes, any variety, diced 
  • 8 fresh basil leaves
  • 3 cups chicken broth (made from Deck Family Farm pasture raised stewing hen)
  • 1 pint raw goats milk
  • Garlic chive Goat cheese, optional for garnish
  • calendula flowers, optional for garnish
  • 2 tsp sea salt, plus more to taste
  • 1/4 tsp ground black pepper, plus more to taste
Instructions:
  1. Heat the butter in a large, deep stock pot over medium heat.
  2. Add the onion and carrots and saute for 8-10 minutes, until tender.
  3. Add the garlic for 1 minute.
  4. Add the tomatoes, basil, chicken stock, salt, and pepper and stir well.
  5. Bring the soup to a boil, lower the heat, and simmer, uncovered, for 30 minutes, until the tomatoes are very tender.
  6. Blend until pureed using an immersion blender right in the pot.
  7. Add salt, pepper and cream and stir to combine
  8. Garnish with Chevre and calendula petals if desired.

  • 1 walla walla onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 5 tomatoes, any variety, diced 
  • 8 fresh basil leaves
  • 3 cups chicken broth (made from Deck Family Farm pasture raised stewing hen)
  • raw sweet cream
  • sour cream, optional for garnish
  • calendula flowers, optional for garnish
  • 2 tsp sea salt, plus more to taste
  • 1/4 tsp ground black pepper, plus more to taste
